HOLIDAY EDITION: Crispy Garlic Ginger Bok Choy


All holiday recipes require a few simple ingredients:

1. An aromatic, seasonal spice, like ginger.

2. A warming, comforting effect, like something crispy.

3. A powerful, putrid pungency, to keep relatives at bay, like garlic.

Dairy Free: Opt for avocado oil instead of ghee.

INGREDIENTS

1 lb Baby Bok Choy

4 Tbs Melted Ghee or Avocado Oil

3-4 Garlic Cloves, Minced

1 Inch Piece of Ginger, Minced

Sea Salt, To Taste

PREP

  1. Preheat oven to 400F.

  2. Cut off the bottom part of the bok choy, then, slice the bok choy in half lengthwise.

  3. In a large bowl, combine the melted ghee or avocado oil, ginger, and garlic.

  4. Add the bok choy to the bowl of mixture and toss. Place the coated bok choy halves on a baking sheet.

  5. Bake for 16-20 minutes, or until the edges are crisp and golden.

  6. Sprinkle with salt and serve!
